Summary

The Kitchen Manager directs a wide variety offood items required in a hospital food service operation and assignssubordinates in such activities.

Essential Duties and Responsibilities

  • Directsa high quality, cost effective industrial kitchen and food preparationoperation.

  • Plansand or implements and supervises Sodexho programs on a variety of nutritionallybalanced, attractive, and cost effective meal menus.

  • Proficientin maintaining food cost relative to budget.

  • Meetswith production staff daily to discuss operations.

  • Meetswith supervisors to discuss daily menus, issues, and problems.

  • Preparesproduction records.

  • Directs,trains, supervises, leads, evaluates, develops, and coaches all assignedpersonnel.

  • Maintainsor approves various administrative materials such as time sheets, payrollmatters, personnel or accounting materials, safety records, OSHA forms, MSDSrecords, etc.

  • Physicallyperforms a wide variety of high volume food production and preparation duties.

  • Monitorsfood service lines during food service.

  • Completesvarious special food orders or items.

  • Supportsan effective safety program.

  • Makessure all assigned responsibilities comply with applicable regulations or soundbusiness practices.

  • Continuouslyimproves the quality of provided services.

  • Performsvarious inventory ordering and control duties.

  • Responsiblefor in-stock conditions based on order needs.

  • Communicateswith vendors in a professional manner.

  • Completesvarious inspection checklists.

  • Inspectsincoming freight against invoices and verifying supplies received.

  • Makessure required supplies and materials will be available as needed.

  • Assuresa high degree of sanitation is observed in all assigned areas. Insure safe chemical usage in all assignedareas.

  • Maycomplete special assignments including conducting demonstrations, revisingprocedures, cost reviews, etc.

  • Maymaintain client evacuation policy.

  • Maybe required to support nutritional needs of response team.

  • Maymaintain and approve such client driven records as process safety managementactivities or responsibilities.

  • Directlysupervises assigned food production employees in a high volume productionkitchen. Responsibilities includeassigning, and directing work; appraising performance; rewarding anddisciplining employees; addressing complaints and resolving problems.

  • Mayinterview, hire, and train employees.

  • Otherrelated duties may also be assigned.

Qualifications

Minimum Requirements

  • High school diploma or GEDequivalent.

  • Municipality of AnchorageFood Handler’s Card or ServSafe Certification contingent upon 30 days of hire.

  • At least five (5) years ofexperience as a kitchen manager in a restaurant or healthcare setting.

  • Three (3) years ofexperience managing a production staff of 25 or more.

  • This experience must alsodemonstrate knowledge of proper food service sanitation methods and equipment,supervisory skills, leadership skills, and food preparation quality controlprocedures.

  • Must follow professionaldemeanor and uniform standards all of the time per company policy.

  • A valid Driver’s License andan acceptable driving record for the past three (3) years to be eligible underNMS’ vehicle insurance policy.

  • Must pass a fingerprintingbackground investigation that complies with The Crime Control Act, Child CareWorker Act and the Indian Child Protection and Family Violence Prevention Act.

  • Contract requires employeesto speak, understand, read and write English.

  • Proof of immunization for measles,mumps, rubella (MMR), Varicella (chicken pox), TB, and any other immunizationsand screenings designated in the current ANTHC Employee Health Program forInfection Control in Hospital Personnel.

  • Annual flu vaccination documentation toContractor.

  • Contractor may be required to maintainall employee health records on site.

Preferred Qualifications

  • Preference will be given tothose with a Culinary Associates Degree or in a related field.

  • Five (5) years of hospitalhealthcare management experience preferred.

  • Strong knowledge of food andcatering trends.

Weather: Indoors: environmentally controlled; requiresmost or all work to be done inside.

Noise level: Moderate

Description of environment:This is an office environment located in an industrial kitchen in a healthcaresetting.

Physical requirements:Employee is required to lift and/or move up to 25 lbs. Frequently required tosit, stand, walk, use hands/fingers to handle or feel, climb, stoop, kneel,crouch or crawl, talk/hear, see, taste/smell, and carry weight/lift.
