The Sous Chef position is responsible for the preparation, production, and quality presentation of a variety of foods. Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
Assumes 100% responsibility for quality of products served.
Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
Portions food products prior to cooking according to standard portion sizes and recipe specifications.
Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment ECT.
Prepares item for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
Follows proper plate presentation and garnish set up for all dishes.
Handles, stores and rotates all products properly.
Assists in food prep assignments during off-peak periods as needed.
Closes the kitchen properly and follows the closing checklist for kitchen stations.
Assists others in closing the kitchen.
Attends all scheduled employee meetings and brings suggestions for improvement.
Meets with production staff daily to discuss operations.
Meets with supervisors to discuss daily menus, issues, and problems.
Prepares production records.
Supports an effective safety program.
Performs other related duties as assigned.
THIS POSITION REQUIRES:
High school diploma or GED equivalent.
Alaska Food Workers Card or ServSafe Certification contingent upon 30 days of hire.
Minimum Three (3) years of related work experience with significant supervisory responsibilities.
At least two (2) years of directly related food preparation experience.
Must pass a fingerprinting background investigation that complies with The Crime Control Act, Child Care Worker Act and the Indian Child Protection and Family Violence Prevention Act.
Must be fluent in speaking, reading, and writing English.
Vaccinations (must provide prior to first day of work):
Proof of immunization for measles, mumps, rubella (MMR), Varicella (chicken pox), TB, and any other immunizations and screenings designated in the current ANTHC Employee Health Program for Infection Control in Hospital Personnel.
Annual flu vaccination documentation to Contractor.
Contractor may be required to maintain all employee health records on site.
At least two (2) years of directly related culinary vocational training.
One (1) year of cafeteria dining or healthcare experience.
Candidates must have the ability to instruct and train others as well as the ability to handle multiple tasks occurring at the same time.
A valid Driver’s License and an acceptable driving record for the past three (3) years to be eligible under NMS’ vehicle insurance policy.
HACCP certified or knowledge of HACCP policies and procedures.

Physical Demands:While performing the duties of this job, the employee is primarily in a controlled, temperate environment. The employee is occasionally required to walk, use hands, and reach with hands and arms. The employee must occasionally lift and/or move up to 50 pounds. Certain positions may require the employee to have the physical stamina to work long hours every day for extended periods of time. The noise level in the work environment is usually moderate to loud.
